Here's a repeat of a food prep picture for jengetfit123 - here's what I had available to cook and then one meal - took me many hours so I was just too tired for more pictures! The one thing that wouldn't fit into the pictures is the greens: collard greens, spinach, and cilantro.
Cooking again tonight. Will do more photos as I go along this time!

good job! I am still wasting produce, not using it up fast enough. Have half a container of mushrooms I need to toss and a grapefruit in the fridge that is at least 3 weeks old. I think there is also about 1/2 avocado that I forgot about a week ago. Those really are too expensive to waste!

@Fritzy 22 - the freezer is your friend! I toss a lot too but try not to. One time I made lime avocado ice cream, it was great! Lots of honey though.
