Ok, very excited to report that I am cooking up a storm today! I made a vegan substitute for ground beef and it is delicious! I added soy sauce, hot sauce and cabbage and made some chinese dumplings with the vegan wrappers I have, and then I also made broiled meatballs with the mix adding mashed chickpeas. Been tasting things along the way and I am very happy with these items! My friend is making a chicken pattie substitute and we are going to do an exchange so I made the recipe and divided it up, so now I have meatballs, dumplings, and ground substitute to bring over to her house and will get tofu/seitan patties. I feel better today, like this vegan February might be pretty exciting.
