I been sick at home for a couple of days. Getting geared up for the nondairy, non-meat challenge, but everybody talkin' bout KFC is doing a bad thing to my head. I do have some chicken that I might marinate and bake, just so I have emergency meat so I do not have high hopes for becoming meat-free. Loaded up on salads, tofu, kale, and some japanese noodle bowls which I love. I don't think they are rice noodles, just plain wheat ones but it's a good vegan option that is quick and microwaveable. The salads can be eaten cold or sauteed to make a hot cabbage side dish. I might get some mushrooms too for more flavor. Brought my lunch today so I should be on track. Been weighing myself daily and the scale is going down, so two weeks to my birthday I might hit my mini-goal of 150's, focus, focus! One of my helpers organized my garage yesterday and the other two (3, actually) cleared the side yard for me - wow, it looks so much better! They will be back later in the week to do more. I have to get my head around calling the junk guy to take stuff away but it is easier when things get more organized. Happy Thursday!
