YetAnother, it was good. I’m trying to get used to buckwheat, abs so far Breton Galette tasted better than any other recipe I tried.

Should look close to this: https://www.letribunaldunet.fr/wp-content/uploads/2020/01/recette-galette-bretonne-traditionnellement-bon.jpg Proportions I can find are for one egg, 10.6 oz of buckwheat flour and 9.3 fl.oz of water, pinch of salt. I've seen some replacing 1/6 of the buckwheat by regular wheat flour, I assume to add a bit of gluten.

It takes a bit of practice to make them thin. This one on the pic is obviously made with a special device, but you can get close in a pan. The lower the edges, the easier the flipping.
