Much better job on the chicken than yesterday's effort. Happy. Vinegar and oil for dressing made spinach palatable. Once this bag is gone, doing to switch to straight up kale for a week or so.

I always forget to use dressings to make large servings of raw greens more palatable. I usually just try to get them down as fast as I can. It makes more sense to make a dressing because there are many healthy and tasty ones.

I just pour the olive oil and the vinegar on separately and very sparingly. Today, I used a hickory smoke flavored olive oil I got as a gift. Good to mix things up.
